These muffin mix pancakes come in so many flavors you won’t even be able to choose. This recipe is also purposefully made in smaller portions for you not to have to deal with all the leftovers that end up getting trashed anyway.
A lot of brands make tiny muffin mix bags of 7 ounces such as Martha White and Betty Crocker. These will give you a plate of 8 to 10 tasty pancakes. You can find a variety of flavors you will enjoy at the store like chocolate chip, banana nut, triple berry, and lemon poppyseed.

🔪 How To Make Pancakes with Muffin Mix
- First add ⅔ cup of milk and an egg to your muffin mix. With the milk, try to pour it in gradually while mixing. Just like your normal pancakes, cook in your pan over the stove.
- This is for a serving of 2 to 3 kids. Feel free to double the recipe if the whole family will be enjoying these.
- Make it your own by mixing in some berries, flax meal, walnuts, diced banana, or chocolate chips.

Muffin Mix Pancakes
Ingredients
- 1 package of muffin mix 6 to 7 ounces
- 1 egg
- ⅔ cup of milk
Instructions
- Warm up your pan on medium low heat.
- Blend your muffin mix with milk and an egg in a bowl using a whisk.
- Scoop up about 2 tablespoons of your batter into your oiled pan, allow to cook for 2 minutes before flipping it on the other side. Continue until you finish your mixture.
- Serve with syrup and butter on top.
Notes
- With the Betty Crocker brand, they use a little but less mix in their packages compared to other brands, so make sure to add a bit less than ⅔ cup of milk when using it.
- You pancakes will be easier to flip if they’re kept small. You will end up with 10 perfect pancakes if you use 2 tablespoons for each.
- Enjoy making these and get creative by adding some walnuts, flax meal, vanilla extract, chocolate chips, fruit, etc..
