Simple Party Skewers Made With Greek Inspired Ingredients

Coat your cherry tomato slices, olives, and cucumber slices in Italian or Greek salad dressing and marinate. Feel free to prepare your own dressing at home.

Kalamata or green olives are best for this dish, they just need to be without the pit. If your family or friends like red onion, add that as well.

For the skewers, the ideal type of cheese is chunked feta cheese, since it holds up well and supports the skewers when put in last.

Slice the feta into cubes the size of a bite, you should get about 36 pieces. Coat those alone to prevent them from crumbling when mixed into the other ingredients.

Greek Salad Skewers (Party Favorite!)

You can leave everything to marinate a couple of hours before plating, or through the night for ultimate results. Then, simply arrange your cheese and vegetable into the tiny skewers.

Ingredients

  • 1 pint of grape or cherry tomatoes
  • 1 cucumber bite-size slices
  • A strained 9.5-ounce jar of pitted kalamata olives
  • 8- ounce chunk of feta sliced into 36 cubes
  • 1 bottle of Italian or Greek dressing
  • Tiny skewers

Instructions

  • Cover the olives, cucumber slices, and cherry tomatoes in Italian or Greek salad dressing in a bowl. Separately, coat the feta bites as well, to prevent them from crumbling if mixed with the veggies. Let marinate for a couple of hours or through the night before arranging.
  • Put the skewers together starting with the olives, then tomatoes, cucumbers, then the feta. They plate beautifully when the cheese is kept for last since it helps them prop up.

Notes

  • If your tomatoes are smaller, you can keep them whole. They would be even better.
  • To jazz it up a bit, when the skewers are ready, garnish them with a bit of dill or parsley.
  • Make sure the salad dressing is gluten-free by checking the label in case you’re trying to avoid it altogether.
