I always keep a bag of frozen cauliflower rice in my freezer, it’s a lifesaver for quick and healthy meals. It soaks up any flavors you add to it, making it super versatile.

This fried rice is great on its own, but if you want to make it heartier, serve it with shrimp, chicken, or steak. Bonus: it keeps really well for meal prep, so I always make extra!

🔪 How to Make Cauliflower Fried Rice

Step 1: Cook the cauliflower rice according to the package instructions. Set it aside and let the steam escape. Meanwhile, chop the carrots and onions.
Step 2: Heat olive oil in a pan over medium-high heat. Add the carrots and onions, cooking for about 5 minutes until softened. Stir in the garlic, frozen peas, and cauliflower rice, then let everything heat through.
Step 3: Push the mixture to the sides of the pan to create a well in the center. Crack in the eggs and scramble them until fully cooked.
Step 4: Stir everything together, then drizzle with toasted sesame oil and soy sauce.

That’s it! Serve it as a side dish with shrimp, chicken, or steak, or enjoy it on its own.

Yes! You can freeze it for up to 3 months. Just thaw overnight in the fridge, then reheat in a pan over medium heat.

Ingredients

  • 15- ounce bag frozen cauliflower rice
  • 2 tablespoons olive oil
  • ½ chopped white or yellow onion
  • 2 diced carrots
  • 1 tablespoon minced garlic
  • ½ cup frozen peas
  • 2 eggs
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons soy sauce
  • Toasted sesame seeds for garnish

Instructions

  • Cook the cauliflower rice according to the package instructions, then set it aside and let the steam escape.
  • Heat olive oil in a wok or large pan over medium-high heat. Add the carrots and onions, cooking for about 5 minutes until softened.
  • Add the minced garlic, then stir in the frozen peas and cauliflower rice. Let everything cook for another 2–3 minutes.
  • Push the mixture to the sides of the pan, creating space in the center. Crack in the eggs and scramble them until fully cooked.
  • Drizzle in the soy sauce and toasted sesame oil. Stir well to combine.
  • Garnish with toasted sesame seeds and serve hot!
